  • 1 cup wild rice

  • 2 cups vegetable or chicken broth

  • 1 tbsp olive oil

  • 1 small onion, diced

  • 1 carrot, diced

  • 1 celery stalk, diced

  • ½ cup dried cranberries

  • ½ cup pecans or walnuts, chopped (optional)

  • 1 tsp fresh thyme or sage

  • Salt and pepper to taste

  • In a skillet, heat olive oil and sauté onion, carrot, and celery until softened.
