1 lb ground beef (or ground turkey)

1 onion, diced

3 garlic cloves, minced

3 carrots, sliced

2 celery stalks, chopped

1 green bell pepper, chopped

1 cup frozen peas

1 (14 oz) can diced tomatoes

6 cups beef broth

1 tsp Italian seasoning

1 tsp paprika

Salt & pepper, to taste

2 cups uncooked elbow macaroni

Fresh parsley, for garnish
Instructions

In a large pot, brown the ground beef over medium heat. Drain excess fat if needed.

Add onion, garlic, carrots, celery, and bell pepper. Cook 5 minutes until softened.

Stir in diced tomatoes, broth, Italian seasoning, paprika, salt, and pepper. Bring to a boil.

Add macaroni and simmer 12–15 minutes, until pasta is tender.

Stir in frozen peas during the last 5 minutes of cooking.
