  • 1 lb beef stew meat, cut into small chunks

  • 2 tbsp butter

  • 1 medium onion, chopped

  • 2 carrots, diced

  • 2 cloves garlic, minced

  • 4 cups beef broth

  • 2 cups whole milk

  • 2 tbsp flour

  • 2 cups shredded sharp cheddar cheese

  • 1/2 cup shredded mozzarella cheese

  • 1/2 tsp paprika

  • Salt and black pepper, to taste

  • Fresh parsley, chopped (for garnish)


Instructions

  • In a large pot, melt butter and brown beef chunks until lightly seared. Remove and set aside.

  • In the same pot, sauté onion, garlic, and carrots until softened.

  • Stir in flour, cooking 1–2 minutes to form a roux.

  • Gradually whisk in beef broth and milk, stirring until smooth.

  • Return beef to the pot and simmer 30 minutes until tender.

  • Stir in cheddar and mozzarella cheese until melted and creamy.

 

  • Season with paprika, salt, and pepper. Garnish with parsley before serving.
