1 lb beef stew meat, cut into small chunks

2 tbsp butter

1 medium onion, chopped

2 carrots, diced

4 cups beef broth

2 cups whole milk

2 tbsp flour

2 cups shredded sharp cheddar cheese

1/2 cup shredded mozzarella cheese

Instructions

In a large pot, melt butter and brown beef chunks until lightly seared. Remove and set aside.

In the same pot, sauté onion, garlic, and carrots until softened.

Stir in flour, cooking 1–2 minutes to form a roux.

Gradually whisk in beef broth and milk, stirring until smooth.

Return beef to the pot and simmer 30 minutes until tender.

Stir in cheddar and mozzarella cheese until melted and creamy.
