1 ½ lbs boneless, skinless chicken breasts, cut into chunks

2 medium zucchinis, sliced into rounds

1 tbsp olive oil

2 cloves garlic, minced

1 tsp smoked paprika

1 tsp Italian seasoning

½ tsp salt

½ tsp black pepper

1 cup shredded mozzarella or cheddar cheese

2 tbsp grated Parmesan

Fresh parsley or thyme, for garnish
Instructions

Preheat oven to 400°F (200°C). Grease a baking dish with olive oil.

In a skillet, heat olive oil and sauté chicken until lightly browned (5 minutes). Add garlic, paprika, salt, pepper, and Italian seasoning.

Layer zucchini slices and browned chicken in the baking dish.
