1 loaf brioche or challah bread, cubed (about 10 cups)

6 large eggs

2 cups milk (or half & half for creamier texture)

1 cup pumpkin puree

1/2 cup brown sugar

1/4 cup granulated sugar

2 tsp pumpkin pie spice

1 tsp vanilla extract

1/4 tsp salt

4 tbsp butter, melted

Instructions

Grease a 9×13 baking dish and add cubed bread.

In a large bowl, whisk together eggs, milk, pumpkin puree, sugars, pumpkin spice, vanilla, and salt.

Pour mixture evenly over bread cubes, pressing lightly to soak.

Drizzle melted butter on top. Cover and refrigerate at least 1 hour or overnight.

Preheat oven to 350°F (175°C). Bake uncovered for 40–45 minutes, until golden and set.

Notes
Best made with slightly stale bread for maximum soak.
Swap brioche for French bread or sourdough for a different texture.
Can be prepped the night before and baked fresh in the morning.
