Ingredients

  • 2 ½ cups all-purpose flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • 1 tsp cinnamon

  • ½ tsp nutmeg

  • ½ tsp ginger

  • 1 cup unsalted butter, softened

  • 1 cup granulated sugar

  • ½ cup brown sugar, packed

  • ½ cup pumpkin puree

  • 1 large egg

  • 1 tsp vanilla extract

Cream Cheese Frosting:

  • 4 oz cream cheese, softened

  • ¼ cup unsalted butter, softened

  • 2 cups powdered sugar

  • 1 tsp vanilla extract

  • Optional: a dash of cinnamon for dusting


Instructions

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

  • In a medium bowl, whisk flour, baking powder, baking soda, salt, and spices.

  • In a large bowl, cream together butter, granulated sugar, and brown sugar until fluffy.

  • Add pumpkin puree, egg, and vanilla; mix until combined.

  • Gradually add dry ingredients, stirring until dough forms.

  • Scoop dough onto baking sheets and flatten slightly with your fingers or a spoon.

  • Bake for 10–12 minutes, until edges are set but centers are soft. Cool completely.

  • For frosting, beat cream cheese and butter until smooth. Add powdered sugar and vanilla, beating until creamy.

 

  • Frost cooled cookies and sprinkle lightly with cinnamon.


Notes

For extra pumpkin spice flavor, add a pinch of cloves or allspice.

Chill the dough for 30 minutes if you prefer thicker cookies.

Store frosted cookies in the fridge for up to 5 days.
