This Quick Cheeseburger Soup is creamy, hearty, and packed with flavor. Loaded with ground beef, tender potatoes, carrots, and a cheesy broth, it’s a cozy meal perfect for busy weeknights or chilly evenings. The flavors are classic and familiar, yet it comes together in under an hour—making it a family favorite that’s both comforting and easy to prepare.


Ingredients

  • 1 lb ground beef

  • 2 tbsp butter

  • 1 onion, diced

  • 2 cloves garlic, minced

  • 2 carrots, chopped

  • 2 potatoes, diced

  • 2 celery stalks, chopped

  • 4 cups chicken or beef broth

  • 2 cups milk

  • 2 cups shredded cheddar cheese

  • 2 tbsp flour (or cornstarch for gluten-free)

  • 1 tsp dried parsley

  • ½ tsp paprika

  • Salt & pepper to taste


Instructions

  • In a large pot, brown the ground beef. Remove and set aside.

  • Melt butter in the same pot. Add onion, garlic, carrots, celery, and potatoes. Cook until softened.

  • Sprinkle flour over vegetables, stir well, and cook for 1 minute.

  • Slowly whisk in broth and bring to a simmer until potatoes are tender.

  • Stir in milk, parsley, paprika, and browned beef. Simmer for 5 minutes.

  • Remove from heat and stir in shredded cheddar until melted and creamy.

 

  • Season with salt and pepper. Serve hot, garnished with extra cheese or parsley.


Notes

Use ground turkey or chicken for a lighter version.

Add bacon bits for extra cheeseburger flavor.

For a keto-friendly twist, swap potatoes with cauliflower.
