1 lb ground beef

2 tbsp butter

1 onion, diced

2 cloves garlic, minced

2 carrots, chopped

2 potatoes, diced

2 celery stalks, chopped

4 cups chicken or beef broth

2 cups milk

2 cups shredded cheddar cheese

2 tbsp flour (or cornstarch for gluten-free)

1 tsp dried parsley

½ tsp paprika

Salt & pepper to taste
Instructions

In a large pot, brown the ground beef. Remove and set aside.

Melt butter in the same pot. Add onion, garlic, carrots, celery, and potatoes. Cook until softened.

Sprinkle flour over vegetables, stir well, and cook for 1 minute.

Slowly whisk in broth and bring to a simmer until potatoes are tender.
