Ingredients

Scale
  • 1 lb kielbasa sausage, sliced into rounds

  • 6 medium potatoes, peeled and cubed

  • 1 medium onion, chopped

  • 3 cloves garlic, minced

  • 4 cups chicken broth

  • 1 cup milk (or heavy cream for creamier texture)

  • 2 tbsp butter

  • 2 tbsp all-purpose flour

  • 1 tsp smoked paprika

  • Salt and pepper, to taste

  • Fresh parsley, chopped (for garnish)

Instructions

  • In a large pot, melt butter over medium heat. Add onion and garlic, sauté until fragrant.

  • Stir in flour and smoked paprika, cooking 1 minute to form a roux.

  • Add chicken broth and potatoes; bring to a boil, then reduce heat and simmer 15 minutes until tender.

  • In a separate skillet, brown sliced kielbasa, then add to soup.

  • Stir in milk or cream, season with salt and pepper. Simmer 5 minutes more.

  • Garnish with parsley and serve warm with crusty bread.

Notes

Substitute turkey kielbasa for a lighter option.

Add chopped carrots or celery for extra veggies.

For a thicker soup, mash some of the potatoes before serving.
