Description

These Thai Coconut Curry Dumplings are a flavorful, comforting, and vibrant dish perfect for cozy nights or special gatherings. The soft dumplings soak up the rich, creamy curry broth, making every bite a burst of exotic flavors. Whether enjoyed on a chilly evening or served at a dinner party, this dish brings restaurant-style taste right to your home kitchen.


Ingredients

  • 1 pack dumpling wrappers

  • 1/2 lb ground chicken (or pork, or tofu)

  • 2 green onions, finely chopped

  • 1 tbsp soy sauce

  • 1 tsp sesame oil

  • 1 garlic clove, minced

  • 1 tsp grated ginger

  • For the Curry Broth:

    • 2 tbsp coconut oil

    • 1 onion, chopped

    • 2 garlic cloves, minced

    • 1 tbsp Thai red curry paste

    • 1 tsp turmeric

    • 4 cups chicken or vegetable broth

    • 1 can (14 oz) coconut milk

    • 1 tbsp fish sauce (or soy sauce for vegan)

    • 1 tsp brown sugar

    • Fresh cilantro and chili slices, for garnish


Instructions

  • In a bowl, mix dumpling filling ingredients. Place a spoonful in the center of each wrapper, fold, and seal edges with water.

  • Heat coconut oil in a pot, sauté onion and garlic until fragrant.

  • Stir in curry paste and turmeric, cook for 1 minute.

  • Add broth, coconut milk, fish sauce, and sugar. Simmer for 10 minutes.

  • Drop dumplings gently into the curry broth. Cook 8–10 minutes until dumplings are tender and filling is cooked.

 

  • Garnish with cilantro and chili slices before serving.


Notes

Use store-bought dumplings to save time.

Adjust spice level by adding more curry paste or chili.

Great with a side of jasmine rice to soak up the curry.
