  • 1 ¾ cups all-purpose flour

  • 1 teaspoon baking soda

  • ½ teaspoon baking powder

  • ½ teaspoon salt

  • 2 teaspoons ground cinnamon

  • 1 teaspoon ground nutmeg

  • ½ teaspoon ground ginger

  • ¼ teaspoon ground cloves

  • 1 cup pumpkin purée (not pumpkin pie filling)

  • 1 cup brown sugar

  • ½ cup granulated sugar

  • ½ cup vegetable oil (or melted butter)

  • 2 large eggs

  • 1 teaspoon vanilla extract


Instructions

  • Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.

  • In a bowl, whisk together flour, baking soda, baking powder, salt, and spices.

  • In a large mixing bowl, combine pumpkin purée, sugars, oil, eggs, and vanilla until smooth.

  • Slowly fold in the dry ingredients, mixing just until combined.

  • Pour batter into prepared pan and smooth the top.

  • Bake for 50–55 minutes, or until a toothpick inserted in the center comes out clean.

 

  • Cool for 10 minutes in the pan before transferring to a wire rack.


Notes
